Buen provecho!

I still can’t get over the food in Honduras! Savory Honduran staples like rice and beans and fried plantains kept us satiated as we worked in the factory, and the ceviche was incredibly fresh and flavorful.

My favorite meal of the trip had to be at Bel Paese, an Italian restaurant in San Pedro Sula. (Who would have thought I would have to travel from NY to Central America for a fabulous Italian meal?!) I have never seen eggplant parmesan sliced so thin. It tasted divine!
